The tasty black truffle juice, obtained by direct extraction from the truffle during its cooking, is "spherified" through a very sophisticated technique, that is, made into small spheres or pearls with a truffle taste, similar in color and texture to caviar.
To be enjoyed, like caviar, on croutons and blinis or to garnish fresh and soft cheeses, hams and foie gras, fish fillets and carpaccio, vegetable soups and purées, cheese fondues, eggs, potatoes, meat fillets and all the dishes that go well with truffles.
